Every Bengali festival has its own box. Festival dates follow the Bengali almanac each year, so we open pre-orders by season, not by fixed date.

Fresh cheese before sunrise.
Our kitchen behind the shop starts at 4 AM. Everything on the counter was milk the evening before.

Milk is split
Full-cream cow's milk from two Nadia dairies is brought to a boil and split with last night's whey. No vinegar, no powder.

The cheese is hung
The curds hang in muslin for forty minutes, until they are moist but no longer drip. This is the step that makes or breaks a sponge ball.

Kneaded by palm
Twelve minutes of kneading on a wooden board, by hand, until the cheese turns smooth and a little shiny.

Into the syrup
Sponge balls swell to twice their size in a light sugar syrup. Milk fudge is cooked dry on a low flame with date-palm jaggery in winter.

The counter is on Bidhan Sarani, a short walk from Shyambazar metro. Bring your own lunchbox and we will fill it.
