Cooked like it's for our own kids.
Every lunchbox starts at 7 AM in a 600 sq ft kitchen off Lokhandwala Road. Eleven cooks, most of them mothers from the neighbourhood, roll flatbreads by hand and temper lentils in small batches. Filtered water, cold-pressed groundnut oil, and the same spice box you have at home.
We plan a week of menus at a time, so Monday's kidney beans never come back on Tuesday. Less salt, less oil, nothing from a packet.

Tier 1 · top
Lentils
Yellow lentils tempered in ghee with cumin, garlic, dried red chilli and curry leaves.Yellow lentils tempered in ghee with cumin, asafoetida, dried red chilli and curry leaves. No garlic. Some days green gram, some days chickpeas, Fridays slow-cooked black lentils.

Vegetables
Today: potatoes and green peas in a light tomato gravy.Okra with cottage cheese today. Jain lunchboxes never carry onion, garlic, potato or any root vegetable. Seasonal greens twice a week.

Flatbreads
Four soft whole-wheat flatbreads, rolled to order and puffed on an open flame, a touch of ghee on top. Swap for two sorghum flatbreads on request.

Rice
Steamed short-grain rice, or cumin rice on Thursdays, with a lemon wedge. Salad and pickle ride in the side pocket; Friday gets a small rice pudding.
