01 The crack
One thumb. One clean hole.
Our puffs are rolled and fried at the Indore central kitchen to 3.4 cm and 1.2 g each, then packed in sealed tins the same night. Thin enough to crack with a thumb, strong enough to hold the water for the walk to your mouth.

02 The filling
Potato, chickpeas, a pinch of everything.
Boiled potato and black chickpeas, mashed coarse with roasted cumin, black salt, red chilli and coriander. Every outlet gets the masala as one pre-mixed packet, so the 50th plate tastes like the first.

03 The dunk
Six flavours. Pick one.
Every flavour starts as RO water chilled to 4 °C. Tap a flavour and watch the bowl change.
Hot mint
Mint, coriander, green chilli and black salt. The classic, and the hottest of the six.
04 Served
On a sal-leaf plate, in 9 seconds.

Hygiene process
No hands in the water. Ever.
The reason people trust a water-puff stall is the water. So every outlet runs the same five steps, and a store manager signs the checklist at every shift.
5-stage RO + UV water
All flavoured water is made from RO and UV-treated water, never tap water. The filter log is checked every morning.
Chilled to 4 °C
The water sits in sealed steel dispensers on ice packs and is replaced every 3 hours, whatever is left.
Tap, not dip
Puffs are filled from the dispenser tap. Nobody's hand ever goes into a water pot.
Gloves, caps, aprons
Food-grade gloves for every server, changed every 30 minutes and after handling cash.
Sealed puff tins
Puffs arrive in sealed tins from the central kitchen and are opened one tin at a time.
