Slow beats boil.
Boiling chai for ages makes it bitter. Low flame with the lid on makes it deep. We wait.

Hyderabad’s Irani-café ritual, re-brewed. Slow brew, warm Osmania, one long table. Today’s pour: Irani
The brew
Filtered water, brought to a hard, rolling boil. Not warm, not simmering. Tea leaves only open up when the water means it.
Strong Assam CTC for body and colour, a pinch of Nilgiri leaf for brightness. Three minutes until the pot turns the colour of old teak.
Green cardamom cracked in a brass mortar, a sliver of ginger, a curl of cinnamon. Ground every hour, never stored in a jar.
Full-cream milk goes in, the lid goes on, the flame goes low. Twelve minutes, lid on, low flame. That is the whole theory: patience, not extra sugar.

Our biscuits come from the bakery two doors down, still warm, before the first walkers from KBR Park.
Long shared tables, no Wi-Fi after 7 PM. Strangers end up splitting a plate of pastries. That is the point.
