01 · Warm the pot
A single rolled leaf of Assam orthodox weighs barely a tenth of a gram. One level teaspoon, about 2 g, makes a 200 ml cup.
02 · Pour
90 to 95°C for Assam and second flush. Let water for a Darjeeling first flush sit a minute, to about 85°C, or it turns harsh.
03 · The leaf wakes
The factory rolled it tight; now it drinks and opens back into what was plucked in the garden: two leaves and a bud.
04 · Colour follows time
Darker is not better. Past five minutes most teas just get more bitter, so we print a steep time on every pack.
05 · Your turn
Copper · Bright, brisk, round. A splash of milk is fine.

Brew Bazaar started in 2018 as one counter near BBD Bagh, a few lanes from where India’s tea has been auctioned since 1861. We taste every lot before we buy it, pack it by hand in the back room, and post it the same week.
