Estate coffee · Chikmagalur, Karnataka

From one red cherry to your morning cup.

Shade-grown Arabica and Robusta from our family estate in the Baba Budan hills, roasted to order and shipped across India.

The estate

Grown slow, in the shade of silver oak.

Our 40-acre estate sits at 1,100 m in the hills above Chikmagalur, where coffee first took root in India. Tall silver oaks shade every bush, black-pepper vines climb their trunks, and the cherries ripen slowly through the monsoon: sweeter, rounder, never rushed.

Cherry to green bean

Pulped, washed, sun-dried.

Inside every ripe cherry sit two flat-faced seeds. Getting them out cleanly is half the flavour.

  1. 01

    Picked ripe

Only red cherries, by hand, in three or four rounds per bush.

  2. 02

    Pulped

The skin slips off the same day, revealing two pale green beans.

  3. 03

    Washed

A night in fermentation tanks, then rinsed in spring water.

  4. 04

    Sun-dried

10 to 12 days on open patios, raked every hour.

  5. 05

    Rested

Beans rest in parchment for 60 days before hulling.

Roast levels

One drum. Three roasts. Watched by hand.

We roast in small batches every Monday and Thursday. Keep scrolling and watch the beans go from green to cinnamon to deep brown.

Light roast coffee beans, cinnamon brown

Light

Orange peel, honey, bright and clean. Best for pour-over.

Medium roast coffee beans, chocolate brown

Medium

Caramel, cocoa, round body. Pour-over, French press, filter coffee.

Dark roast coffee beans, almost black with an oily sheen

Dark

Bittersweet, smoky, thick. Filter coffee with milk.

First crack is the little pop you hear when the beans release steam, at around 196°C. Light roasts stop just after it.

Brew guide

Two ways we love it.

A steel South Indian coffee filter beside a tumbler and bowl of frothy filter coffee
  1. Add medium-fine coffee to the top chamber of a steel filter and press lightly with the plunger.
  2. Pour just-boiled water over it, close the lid and let the decoction drip for 15 to 20 minutes.
  3. Boil milk till frothy, add decoction and sugar to taste.
  4. Pour from tumbler to bowl and back, high, for that froth.
